بن ماری bain marie عبارتی فرانسوی است که حمام های آبی (Water Bath) نیز نامیده می شود.
کاربرد فراوانی در رشته های مختلفی اعم از علوم طبیعی ، صنعت ، آزمایشگاه های پزشکی و آشپزی دارد.
در روش بن ماری برای حرارت دادن تدریجی و غیرمستقیم مواد تا رسیدن به دمایی ثابت ، یا برای گرم نگه
داشتن مواد طی دوره ای زمانی مورد استفاده قرار می گیرد.
از بن ماری ها به منظور گرم کردن مواد و ذوب کردن نمونه ها نیز استفاده می شود. به عنوان یک قاعده ی
کلی ، در بن ماری ها از آب استفاده می شود؛ اگرچه در تعداد معدودی از آن ها از روغن نیز استفاده می
شود.
بن ماری دارای یک مخزن آب می باشد و ممکن است بر روی مخزن درپوشی تعبیه شده باشد. معمولاً درپوش
ها زاویه دار و حدود 30 درجه هستند. حرارت آب دستگاه توسط یک ترموستات قابل تنظیم می باشد.
برای جلوگیری از رسوب املاح درون محفظه ی این دستگاه بر روی المنت، از آب مقطر استفاده می شود.
ساختار یک بن ماری
اجزای بن ماری عبارتاند از: یک کنترل الکتریکی، صفحه نمایش، در یا پوشش و یک مخزن. در این نوع
دستگاهها ممکن است اجزای دیگری ماند دماسنج و همزن برای ثابت نگه داشتن دما نیز به کار گرفته شود.
اصول عملکرد
بن ماریها بهطور کلی از فولاد ساخته میشوند و برای محافظت آنها در برابر شرایط محیطی آزمایشگاهها،
داخل تانک را از رنگ الکترواستاتیک با چسبندگی و مقاومت بالا میپوشانند. بن ماریها دارای یک پانل خارجی
هستند که کلیدهای کنترل فعالیت دستگاه بر روی آن نصب شدهاست.
بن ماری همچنین دارای یک تانک مقاوم مجهز به مواد ضدزنگ است که در سطح پایین داخل آن مقاومتهای
الکتریکی نصب هستند. با اتصال دستگاه به جریان الکتریکی برق، گرما از طریق این مقاومتها به قسمت
وسط دستگاه منتقل میشود. محدوده دمای مورد نظر از طریق یک کنترلر نظیر ترموستات یا شبیه آن به دست
میآید.

نوع شناور این نوع مقاومت در داخل یک لوله بسته قرار دارد و از قسمت پایین محفظه در ارتباط مستقیم با گرمکننده میانی میباشد.

خارجی این نوع مقاومت در قسمت پایین ظرف اما در خارج آن قرار داده میشود. این مقاومت دارای مواد عایق یا روکش دار برای جلوگیری از اتلاف حرارت است و از طریق یک هادی گرمایی به انتهای ظرف منتقل میشود.
کنترلکنندههای بن ماری
بن ماریها عموماً دارای کنترلکنندههای بسیار ساده هستند اما بعضی از سازندگان این کنترلکنندهها را از
طریق تجهیز به میکروپروسسور ارائه میدهند که عملکرد آنها بر حسب نوع بن ماری ارائه شده متغیر است.

عملکرد بن ماری
دستگاه بن ماری از طریق اتصال به یک منبع تغذیه الکتریکی مجهز به اتصال زمین برای حفاظت از دستگاه و
تضمین ایمنی کاربر راهاندازی میشود. بن ماریها عموماً با جریان الکتریکی ۱۲۰ ولت با فرکانس ۶۰ هرتز یا
۲۳۰–۲۲۰ ولت با فرکانس ۶۰/۵۰ هرتز فعال میشوند. نصب و راهاندازی این نوع دستگاهها بایستی در کنار یک
سینک برای سهولت در پر و خالی کردن آن انجام گیرد.

Bain marie
Description
The double boiler comes in a wide variety of shapes, sizes, and types, but traditionally is a wide,
cylindrical, usually metal container made of three or four basic parts: a handle, an outer (or lower)
container that holds the working fluid, an inner (or upper), smaller container that fits inside the outer
one and which holds the material to be heated or cooked, and sometimes a base underneath.
Under the outer container of the bain-marie (or built into its base) is a heat source.
Typically the inner container is immersed about halfway into the working fluid.
The smaller container, filled with the substance to be heated, fits inside the outer container filled
with the working fluid (usually water), and the whole is heated at, or below, the base, causing the
temperature of the materials in both containers to rise as needed.
The constant boiling temperature of the water helps to keep contents of the inner pot from boiling or
scorching.
When the working fluid is water and the bain-marie is used at sea level, the maximum temperature
of the material in the lower container will not exceed 100 degrees Celsius (212 °F), the boiling point
of water at sea level.
Using different working fluids, for example, oil, in the lower container will result in different
maximum temperatures.
Alternatives
A contemporary alternative to the traditional, liquid-filled bain-marie is the electric “dry-heat” bain-
marie, heated by elements below both pots.
The dry-heat form of electric bains-marie often consumes less energy, requires little cleaning, and
can be heated more quickly than traditional versions.
They can also operate at higher temperatures, and are often much less expensive than their
traditional counterparts.
Electric bains-marie can also be wet, using either hot water or vapor, or steam, in the heating
process.
The open, bath-type bain-marie heats via a small, hot-water tub (or “bath”), and the vapour-type
bain-marie heats with scalding-hot steam.
Culinary applications
In cooking applications, a bain-marie usually consists of a pan of water in which another container or
containers of food to be cooked is placed within the pan of water.

Chocolate can be melted in a bain-marie to avoid splitting and caking onto the pot. Special dessert bains-marie have a thermally insulated container and are used as a chocolate fondue.

Cheesecake is often baked in a bain-marie to prevent the top from cracking in the centre.

Custard may be cooked in a bain-marie to keep a crust from forming on the outside of the custard before the interior is fully cooked. In the case of the crème brûlée, placing the ramekins in a roasting pan and filling the pan with hot water until it is 1/2 to 2/3 of the way up the sides of the ramekins transfers the heat to the custard gently, which prevents the custard from curdling. The humidity from the steam that rises as the water heats helps keep the top of the custard from becoming too dry.

Classic warm sauces, such as Hollandaise and beurre blanc, requiring heat to emulsify the mixture but not enough to curdle or “split” the sauce, are often cooked using a bain-marie.

Some charcuterie such as terrines and pâtés are cooked in an “oven-type” bain-marie.

Thickening of condensed milk, such as in confection-making, is done easily in a bain-marie.

Controlled-temperature bains-marie can be used to heat frozen breast milk before feedings.

Bains-marie can be used in place of chafing dishes for keeping foods warm for long periods of time, where stovetops or hot plates are inconvenient or too powerful.

A bain-marie can be used to re-liquefy hardened honey by placing a glass jar on top of any improvised platform sitting at the bottom of a pot of gently boiling water.
